Saint-Aubin AOC
Saint-Aubin AOC is a designated wine appellation located within the Burgundy region of France. Saint-Aubin AOC produces predominantly white Chardonnay and some red Pinot Noir in a side valley beside Montrachet.
Overview
Vineyards climb both sides of a valley between Puligny-Montrachet and Chassagne-Montrachet. Limestone-rich slopes, varied aspects, and cool airflow produce precise Chardonnay with citrus, floral, and mineral depth, alongside fresh, fragrant Pinot Noir.
History
The village’s vineyards developed in the shadow of Montrachet and gained communal AOC recognition in 1937.
Geography
The appellation occupies slopes around the Gamay hamlet and the valley west of the Montrachet hill, with broad variation in aspect and altitude.
Climate
Cool valley influence and elevated sites slow ripening, while sunnier south- and east-facing slopes provide concentration.
Soils
Jurassic limestone and marl dominate, with shallow stony soils, clay pockets, and scree varying across the valley.
Wine styles
White Chardonnay dominates and ranges from taut to richly textured; red Pinot Noir is less common and typically fresh and aromatic.
Notable features
Its extensive Premier Cru slopes offer close geological proximity to Montrachet with a distinctly cooler valley setting.
