Overview

Sauternes AOC covers five communes south of Bordeaux near the Garonne River and its cooler tributary, the Ciron. Their meeting encourages autumn morning fog, followed in favorable conditions by drier, sunnier afternoons. This pattern supports Botrytis cinerea in its beneficial noble-rot form rather than simple destructive rot.

Sémillon is the principal grape because its skins respond well to botrytis and its texture supports rich wines. Sauvignon Blanc and Sauvignon Gris add acidity and aromatic lift, while Muscadelle may contribute floral notes. Harvesters pass through vineyards repeatedly, selecting individual bunches or berries as they become suitably concentrated.

Barsac lies within the Sauternes production zone but also has its own appellation. Soils and mesoclimates vary across gravel rises, sand, clay, silt, and lower terrain, changing botrytis development and wine profile.

This structure should connect the appellation to communes, estates, vineyards, grapes, vintages, and wines. Vintage conditions are particularly important because noble rot and selective harvest depend on a narrow sequence of moisture and dry weather. It should also preserve the relationship with Barsac without collapsing their identities. A qualifying Barsac wine may use either Barsac or Sauternes according to applicable rules, while other Sauternes communes cannot use Barsac. Modeling both areas makes that overlap understandable and keeps the label language geographically precise.

The appellation occupies rolling terrain near the Ciron and Garonne, with low rises, gentle slopes, stream valleys, and forest edges across the communes of Sauternes, Barsac, Bommes, Fargues, and Preignac.

Soils

Soils include alluvial gravel, sand, silt, clayey sand, and mixed deposits. Gravel promotes drainage and warmth on rises, while clay and lower sites retain more moisture. These differences affect vine water supply and botrytis timing.
